The theme of the menu served for a reception hosted by Istanbul Centre in Brussels on 22 October 2008, is “İstanbul during the period of IV.Mehmet The Hunter”.
“ISTANBUL IN THE TIME OF MEHMET IV – THE HUNTER”
In 17th-century Istanbul, the height of luxury at the table was game. And leading the fashion in taste was the Sultan, Mehmet IV, a great horseman who loved nothing more than to go hunting. In those days the city was surrounded by woodland and untamed countryside. It was full of all kinds of animals, and its lakes were full of fish. This was Mehmet’s hunting ground, and he would take to it at every opportunity.
His love of the hunt was spurred on by his love of eating game. He relished the strong flavours of pheasant, guinea fowl and all kinds of deer.
Here, we have the pleasure to present a few of those game dishes that the Sultan enjoyed, prepared with authentic ingredients. We hope they are to your liking, too.
